Description

Ingredients

  • 2 lbs waxy potatoes (e.g., red or Yukon Gold)
  • 1 cup mayonnaise
  • 2 tbsp mustard
  • 1 tbsp vinegar
  • 1/2 cup finely chopped onions
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped celery
  • Salt and pepper to taste

Instructions

  1. Wash the potatoes and cut them into even chunks.
  2. Boil the potatoes in salted water until tender, about 10–15 minutes.
  3. Prepare the dressing by mixing mayonnaise, mustard, and vinegar in a bowl.
  4. Drain the potatoes and let them cool slightly.
  5. Combine the potatoes with the dressing gently to avoid breaking them.
  6. Add chopped onions, bell peppers, and celery; mix gently.
  7. Season with salt and pepper to taste.
  8. Chill in the refrigerator before serving for optimal flavor.
