Ingredients

- 2 lbs waxy potatoes (e.g., red or Yukon Gold)
- 1 cup mayonnaise
- 2 tbsp mustard
- 1 tbsp vinegar
- 1/2 cup finely chopped onions
- 1/2 cup diced bell peppers
- 1/2 cup chopped celery
- Salt and pepper to taste
Instructions
- Wash the potatoes and cut them into even chunks.
- Boil the potatoes in salted water until tender, about 10–15 minutes.
- Prepare the dressing by mixing mayonnaise, mustard, and vinegar in a bowl.
- Drain the potatoes and let them cool slightly.
- Combine the potatoes with the dressing gently to avoid breaking them.
- Add chopped onions, bell peppers, and celery; mix gently.
- Season with salt and pepper to taste.
- Chill in the refrigerator before serving for optimal flavor.
Notes
For added flavor, consider letting the salad sit covered in the refrigerator for a couple of hours before serving.
