Ingredients

- 12 chiles de arbol
- 1 chile guajillo
- 2 cloves of garlic
- 7 tomatillos
- 1/4 onion
- Salt to taste
- Approximately 3 tablespoons of water
Instructions
- Remove the stems from the chiles de arbol and guajillo. Toast them lightly in a pan over medium heat for a few seconds until fragrant.
- In the same pan, add the garlic and cook until golden brown.
- Rinse the tomatillos and add them to the blender with the toasted chiles, garlic, onion, salt, and water.
- Blend until smooth, adjusting the water for the desired consistency.
- Taste and adjust seasoning as necessary.
- Serve with tacos or as a dip.
Notes
Consider adjusting the heat level by varying the type of chiles used. Store in an airtight container for up to one week in the refrigerator.
