Ingredients

  • 12 chiles de arbol
  • 1 chile guajillo
  • 2 cloves of garlic
  • 7 tomatillos
  • 1/4 onion
  • Salt to taste
  • Approximately 3 tablespoons of water

Instructions

  1. Remove the stems from the chiles de arbol and guajillo. Toast them lightly in a pan over medium heat for a few seconds until fragrant.
  2. In the same pan, add the garlic and cook until golden brown.
  3. Rinse the tomatillos and add them to the blender with the toasted chiles, garlic, onion, salt, and water.
  4. Blend until smooth, adjusting the water for the desired consistency.
  5. Taste and adjust seasoning as necessary.
  6. Serve with tacos or as a dip.

Notes

Consider adjusting the heat level by varying the type of chiles used. Store in an airtight container for up to one week in the refrigerator.
