- 2 cups cooked sushi rice
- 1 cup canned tuna, drained
- 1 avocado, diced
- 1/4 cup mayonnaise
- 1 tablespoon sriracha
- 1 tablespoon soy sauce
- 1/4 cup green onions, chopped
- 2 tablespoons sesame seeds
- Salt and pepper to taste
- Mixed greens for serving
Instructions
- In a bowl, combine the drained tuna, mayonnaise, sriracha, soy sauce, green onions, salt, and pepper.
- In a separate bowl, mix the cooked sushi rice with a little vinegar if desired.
- Form the rice into small square shapes or patties.
- Heat a non-stick skillet over medium heat and lightly toast the rice on each side until crispy.
- Serve the crispy rice topped with the spicy tuna mixture and diced avocado on a bed of mixed greens.
- Sprinkle with sesame seeds before serving.
Notes
