- 4 medium tomatoes
- 1 medium onion
- 2 jalapeno peppers
- 2 cloves of garlic
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro (optional)
- Lime juice (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the tomatoes, onion, and jalapeños in half and place them on the baking sheet.
- Drizzle with olive oil and sprinkle with salt.
- Roast in the oven for about 20-25 minutes, until the vegetables are caramelized.
- Combine the roasted vegetables and garlic in a food processor. Add cilantro and lime juice if desired.
- Blend until you reach your desired consistency.
- Serve with chips, tacos, or as a marinade.
Notes
For a chunkier texture, chop the roasted veggies by hand instead of blending.
