Description

A flavorful blend of roasted vegetables that adds a burst of taste to countless dishes, perfect for tacos or tortilla chips.


Ingredients

  • 4 medium tomatoes
  • 1 medium onion
  • 2 jalapeno peppers
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro (optional)
  • Lime juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the tomatoes, onion, and jalapeños in half and place them on the baking sheet.
  3. Drizzle with olive oil and sprinkle with salt.
  4. Roast in the oven for about 20-25 minutes, until the vegetables are caramelized.
  5. Combine the roasted vegetables and garlic in a food processor. Add cilantro and lime juice if desired.
  6. Blend until you reach your desired consistency.
  7. Serve with chips, tacos, or as a marinade.

Notes

For a chunkier texture, chop the roasted veggies by hand instead of blending.
