- 1 cup black beans (canned, drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 cup diced bell peppers
- 1 cup diced onions
- 2 cups enchilada sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups cooked rice (optional)
- Shredded cheese (optional, for topping)
Instructions
- Heat a large skillet over medium heat.
- Add the ground beef and cook until browned, then drain excess fat.
- Stir in the diced onions and bell peppers; cook until softened.
- Add black beans, corn, enchilada sauce, cumin, chili powder, salt, and pepper. If using, mix in the cooked rice.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Optionally, sprinkle cheese on top and cover until melted.
- Serve hot and enjoy!
Notes
Allow the ground beef to cook thoroughly without overcooking, and sauté vegetables until soft for maximum flavor.
