Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, and allspice in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy in another bowl.
  4. Beat in molasses and egg until well combined.
  5. Add the dry mixture to the wet ingredients gradually, mixing until just combined.
  6. Roll dough into balls, then roll each ball in granulated sugar.
  7. Place on a baking sheet lined with parchment paper.
  8. Bake for 10–12 minutes, until crackled on top.
  9. Let cool on the sheet for a few minutes before transferring to a wire rack.

Notes

For perfect results, space the balls at least 2 inches apart. Use a cookie scoop for uniform size. Do not overbake; remove when centers look slightly underdone.
