- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup molasses
- 1 large egg
- 1/4 cup granulated sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together flour, baking soda, salt, ginger, cinnamon, and allspice in a bowl.
- Cream together the softened butter and sugar until light and fluffy in another bowl.
- Beat in molasses and egg until well combined.
- Add the dry mixture to the wet ingredients gradually, mixing until just combined.
- Roll dough into balls, then roll each ball in granulated sugar.
- Place on a baking sheet lined with parchment paper.
- Bake for 10–12 minutes, until crackled on top.
- Let cool on the sheet for a few minutes before transferring to a wire rack.
Notes
For perfect results, space the balls at least 2 inches apart. Use a cookie scoop for uniform size. Do not overbake; remove when centers look slightly underdone.
