Description

Delightful Mexican Pizzas that combine Tex-Mex flavors for a quick and enjoyable meal.

Ingredients

Scale
  • 1 lb ground beef
  • 1 chopped onion
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/4 tsp cayenne
  • 1 tbsp minced garlic
  • Small fajita size flour tortillas
  • 1 can refried beans
  • Taco sauce
  • 2 cups shredded cheese
  • Diced tomatoes
  • Chopped green onions
  • Vegetable oil

Instructions

  1. Brown the beef in a large skillet over medium-high heat, breaking it into small pieces.
  2. Add the chopped onion and cook until softened, about 3–5 minutes.
  3. Season with salt, pepper, chili powder, cumin, dried cilantro, and cayenne.
  4. Stir in minced garlic and cook for another minute.
  5. Prepare tortillas by lightly frying them in vegetable oil until golden brown, about 2 minutes per side.
  6. Assemble pizzas by spreading refried beans on each tortilla, topping with the beef mixture, taco sauce, and shredded cheese.
  7. Bake in a preheated oven at 400°F (200°C) for 10-12 minutes until cheese is melted and bubbly.

Notes

For a vegetarian version, substitute ground beef with sautéed vegetables. Enjoy with side toppings like sour cream and guacamole.
