Ingredients

  • 1 lbs mini sweet peppers
  • 1 lbs mini cucumbers
  • 4 oz feta cheese
  • 1/2 red onion
  • 2 tbsp parsley
  • 1/4 cup extra virgin olive oil (EVOO)
  • 1 tbsp red wine vinegar
  • 1 lemon, juiced
  • 1 tsp salt
  • Black pepper to taste

Instructions

  1. Wash the mini peppers and remove the tops, also de-seeding them. Semi-peel the cucumbers to keep some texture and slice them thinly.
  2. Slice half a red onion and chop the parsley for an additional flavor.
  3. Place all the prepared vegetables in a large salad bowl and crumble the feta cheese over the top.
  4. Whisk together the olive oil, red wine vinegar, lemon juice, salt, and black pepper for the dressing.
  5. Pour the dressing over the salad mixture, then mix everything gently without crushing the vegetables.
  6. Serve immediately for the best texture and freshness.
