- 1 lbs mini sweet peppers
- 1 lbs mini cucumbers
- 4 oz feta cheese
- 1/2 red onion
- 2 tbsp parsley
- 1/4 cup extra virgin olive oil (EVOO)
- 1 tbsp red wine vinegar
- 1 lemon, juiced
- 1 tsp salt
- Black pepper to taste
Instructions
- Wash the mini peppers and remove the tops, also de-seeding them. Semi-peel the cucumbers to keep some texture and slice them thinly.
- Slice half a red onion and chop the parsley for an additional flavor.
- Place all the prepared vegetables in a large salad bowl and crumble the feta cheese over the top.
- Whisk together the olive oil, red wine vinegar, lemon juice, salt, and black pepper for the dressing.
- Pour the dressing over the salad mixture, then mix everything gently without crushing the vegetables.
- Serve immediately for the best texture and freshness.
