Description

A comforting favorite, this Loaded Baked Potato Casserole features creamy potatoes, rich cheese, and crispy bacon, perfect for any gathering.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 4 slices bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Butter for greasing the dish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and place in a large bowl.
  3. Mix in sour cream, half the cheddar cheese, green onions, bacon, garlic powder, onion powder, salt, and pepper.
  4. Grease a baking dish with butter and pour the potato mixture into it.
  5. Top with the remaining cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let cool slightly before serving.

Notes

For a lighter version, substitute Greek yogurt for sour cream. Be sure to monitor the texture to avoid mushy potatoes.
