- 2 pounds potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- 4 slices bacon, cooked and crumbled
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Butter for greasing the dish
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and place in a large bowl.
- Mix in sour cream, half the cheddar cheese, green onions, bacon, garlic powder, onion powder, salt, and pepper.
- Grease a baking dish with butter and pour the potato mixture into it.
- Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For a lighter version, substitute Greek yogurt for sour cream. Be sure to monitor the texture to avoid mushy potatoes.
