- 1/2 packet Ranch dressing
- 1 cup Greek yogurt
- 3/4 cup shredded taco cheese
- 10 taco-sized flour tortillas
Instructions
- Mix 1/2 packet of ranch dressing mix with 1 cup of Greek yogurt to create a flavorful ranch dip. Set this aside.
- Clean the medium-sized carrots and dice them using a food processor, aiming for a fine texture to blend seamlessly into the chicken mixture.
- Combine the diced carrots and 1/2 cup of cheese with the prepared Greek yogurt dip.
- Chop the rotisserie chicken finely, creating bite-sized pieces, and mix it into the yogurt dip along with the carrots until well combined.
- Take a taco-sized tortilla and add about 1/4 cup of the chicken mixture; top with 1 tablespoon of shredded cheese.
- Roll the tortilla tightly, spraying the end with a bit of cooking spray to hold a seal.
- Arrange the rolled taquitos in the air fryer basket, ensuring they do not touch each other.
- Air fry at 370F for 8 minutes, turning halfway through cooking for even crisp.
- Once they are golden brown, remove from the air fryer and garnish with cilantro if desired.
