- 2 bone-in ribeye steaks
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup onion, thinly sliced
- 1/2 cup heavy cream
- 1/2 cup blue cheese, crumbled
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your grill to medium-high heat.
- Season the ribeye steaks with salt and pepper on both sides, then brush with olive oil.
- Grill the steaks for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached.
- While the steaks are grilling, melt butter in a pan over medium heat and add the sliced onions. Cook until they are soft and caramelized, about 10 minutes.
- Stir in heavy cream and blue cheese, allowing it to melt and combine into a sauce.
- Once the steaks are done, let them rest for a few minutes. Then serve topped with the blue cheese onion sauce and garnish with parsley.
Notes
Keep an eye on the grill temperature and avoid flipping the steaks too often for a good sear.
