A healthier twist on the classic chicken parmesan made in an air fryer, featuring a crispy exterior and rich flavor.

- 2 (6 oz) chicken breasts, cut into cutlets or use store-bought cutlets
- 2 cups seasoned panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon granulated garlic
- 1 teaspoon chili powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2–3 large eggs
- Olive oil cooking spray
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- Chopped basil and parsley for topping
Instructions
- Preheat the air fryer to 390°F.
- In a shallow bowl, combine the breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, chili powder, salt, and pepper.
- In a separate shallow bowl, crack and whisk the eggs, seasoning lightly with salt and pepper.
- Prepare the chicken by drying it with a paper towel. Dip each cutlet into the eggs, shaking off the excess before coating it with the breadcrumb mixture. Ensure each piece is well-coated and press the crumbs into the chicken.
- Spray the air fryer basket lightly with olive oil. Place the chicken in a single layer, ensuring none of the pieces are overlapping. Spray the tops of the chicken with olive oil.
- Cook for 5 minutes, then flip the chicken over, spray again, and cook for an additional 5 minutes.
- After 10 minutes of cooking, open the air fryer and add sauce to each piece of chicken, followed by mozzarella and a sprinkle of parmesan. Return the chicken to the air fryer and cook for another 2 minutes to allow the cheese to melt.
- Once done, remove the chicken from the air fryer and let it rest for 5 minutes before serving. Enjoy with a spinach salad or pasta!
Notes
For best results, ensure the chicken is dry before breading and do not overcrowd the air fryer for maximum crispiness.
