- ½ pound Tomatillos
- 15–20 Dried Chile de Arbol
- 1 Garlic Clove
- ¼ cup Water
- Salt to Taste
Instructions
- Peel the husk from the tomatillos and wash them well to remove any residue from the skin. Allow them to dry completely.
- Remove the stems from the chile de arbol pods. If you prefer a milder salsa, remove the seeds as well.
- In a dry skillet over medium heat, toast the chiles de arbol lightly to enhance their aroma; do not allow them to burn.
- Transfer the toasted chiles to a blender and set them aside for later.
- Using the same skillet, roast the tomatillos over medium heat for about 10 to 15 minutes or until they blister and soften. Once they are blistered, turn off the heat and let them cool for a few minutes.
- In your blender, add ¼ cup of water to the toasted chiles and blend until a paste forms. Then incorporate the cooled and softened tomatillos, garlic, and salt into the blender. Pulse until everything is well-mixed and you reach your desired consistency. Always taste, as you may want to add more salt.
- This salsa can be used immediately or stored in a sealed jar in the refrigerator for up to a week.
