- 1 lb boneless, skinless chicken breasts
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup provolone cheese or cheese of choice
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 hoagie rolls
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, cooking until softened.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook until chicken is thoroughly cooked, approximately 6-7 minutes per side.
- Slice cooked chicken and return to skillet, mixing with vegetables.
- Top with provolone cheese and cover until melted.
- Serve the mixture in hoagie rolls.
Notes
For extra crunch, consider toasting the hoagie rolls lightly before serving. Marinating the chicken can enhance flavor.
