- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups ready rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, salsa
Instructions
- Brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
- Stir in the taco seasoning, black beans, and corn, warming everything through.
- Add the ready rice to the skillet and mix well.
- Sprinkle shredded cheese on top and cover the skillet until the cheese melts, about 3-5 minutes.
- Season with salt and pepper to taste.
- Serve warm, topped with optional toppings if desired.
