Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, salsa

Instructions

  1. Brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
  2. Stir in the taco seasoning, black beans, and corn, warming everything through.
  3. Add the ready rice to the skillet and mix well.
  4. Sprinkle shredded cheese on top and cover the skillet until the cheese melts, about 3-5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with optional toppings if desired.
