A comforting and creamy casserole combining tender chicken, rice, and green beans, topped with cheesy goodness.

- 1 cup long grain white rice
- 2 cups chicken broth
- 2 tablespoons extra virgin olive oil (divided)
- 8 oz mushrooms (sliced)
- 1 shallot (chopped)
- Homemade seasoned salt and pepper (see notes)
- 2 chicken breasts (~1 lb, cut into bite-sized pieces)
- 8 oz shredded sharp cheddar cheese
- 15 oz can green beans (cut or French-style, drained)
- 6 oz can gluten-free French fried onions
- 1/4 cup butter
- 1/4 cup gluten-free flour
- 1 1/2 cups chicken broth
- 3/4 cup milk (any kind)
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
Instructions
- Preheat your oven to 350 degrees F.
- Add the rice and chicken broth to a small saucepan over high heat. Bring it to a simmer, cover, and reduce the heat to low. Cook for 10-12 minutes until tender. Fluff and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and chopped shallots. Sauté until golden brown and tender; season with salt and pepper.
- Scoop the mushrooms and shallots into a bowl and set aside.
- Add the remaining tablespoon of olive oil to the skillet. Include the chicken pieces, seasoning with salt and pepper. Sauté for 5-7 minutes, until cooked through.
- Scoop the chicken into the bowl with the mushrooms.
- Melt the butter in the same skillet and add gluten-free flour, stirring continuously to form a roux.
- Whisk in 1 1/2 cups of chicken broth and 3/4 cup of milk. Stir and cook until the sauce thickens, about 3-5 minutes. Season with salt, garlic powder, and pepper.
- Combine the cooked rice, chicken, vegetables, and sauce in a large mixing bowl. Fold in drained green beans.
- Pour the mixture into a greased baking dish. Top with shredded cheese and French fried onions.
- Bake for 25-30 minutes until hot and bubbly.
Notes
For extra richness, mix in a bit of cream cheese into the sauce. Use freshly grated cheese for the best melting quality.
