Description

A simple and delicious Breakfast Frittata that serves as a versatile canvas for culinary creativity.


Ingredients

  • 4 large British Lion eggs
  • 50g (2oz) mature Cheddar cheese, grated
  • 1 cup mushrooms, chopped
  • 4 cherry tomatoes, halved
  • A handful of chopped spinach
  • Fresh chopped herbs (basil, chives, or parsley)
  • Green onion (for garnish)
  • A pinch of salt

Instructions

  1. Preheat the air fryer to 350 F (180 C).
  2. Line a deep 7-inch baking pan with parchment paper and lightly oil the pan; set aside.
  3. In a bowl, whisk together the eggs and cream until fully combined.
  4. Add in the mushrooms, cherry tomatoes, spinach, herbs, and a pinch of salt, stirring to mix everything evenly.
  5. Pour the mixture into the prepared pan and cook in the air fryer for about 15-20 minutes or until the frittata is set in the center.

Notes

For best results, check the frittata intermittently to prevent overcooking. You can serve it warm or at room temperature.
