- 4 large British Lion eggs
- 50g (2oz) mature Cheddar cheese, grated
- 1 cup mushrooms, chopped
- 4 cherry tomatoes, halved
- A handful of chopped spinach
- Fresh chopped herbs (basil, chives, or parsley)
- Green onion (for garnish)
- A pinch of salt
Instructions
- Preheat the air fryer to 350 F (180 C).
- Line a deep 7-inch baking pan with parchment paper and lightly oil the pan; set aside.
- In a bowl, whisk together the eggs and cream until fully combined.
- Add in the mushrooms, cherry tomatoes, spinach, herbs, and a pinch of salt, stirring to mix everything evenly.
- Pour the mixture into the prepared pan and cook in the air fryer for about 15-20 minutes or until the frittata is set in the center.
Notes
For best results, check the frittata intermittently to prevent overcooking. You can serve it warm or at room temperature.
