Ingredients

- 2 medium zucchini
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchini into thin strips.
- In one bowl, mix the breadcrumbs with half of the Parmesan cheese, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini strip into the egg, then coat with the breadcrumb mixture.
- Place the coated zucchini fries on a baking sheet lined with parchment paper.
- Sprinkle the remaining Parmesan cheese on top and lightly spray with olive oil.
- Bake for 20-25 minutes, or until golden and crispy.
- Serve warm and enjoy!
Notes
For extra flavor, consider adding garlic powder or Italian seasoning to the breadcrumb mixture. Store leftovers in an airtight container in the fridge for up to three days.
