- 1 pound fresh green beans, trimmed
- 4 ounces bacon, chopped
- 8 ounces mushrooms, sliced
- 1 cup cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 onion, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup French fried onions (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the bacon in a skillet over medium heat until crispy. Remove and set aside.
- Add the mushrooms and onion to the same skillet; sauté until tender.
- Combine the green beans, cream of mushroom soup, milk, sautéed mushrooms and onion, garlic powder, cooked bacon, and half of the cheddar cheese in a large bowl. Season with salt and pepper.
- Pour the mixture into a greased casserole dish.
- Bake for 25 minutes.
- Remove from the oven, stir, then sprinkle the remaining cheese (and French fried onions, if using) on top.
- Return to the oven and bake for an additional 10-15 minutes, until bubbly and golden brown.
- Let it cool slightly before serving.
Notes
For the best results, monitor the casserole closely towards the end of baking to avoid overcooking.
