A quick and delicious recipe for chicken sausage and vegetables, cooked perfectly in an air fryer. Ideal for busy weeknights or casual gatherings.


Ingredients

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz) – robust Italian flavor

Instructions

  1. Prepare your vegetables; wash and cut them into 1-inch pieces.
  2. Combine the chopped veggies in a large bowl and drizzle with avocado oil.
  3. Mix together garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
  4. Sprinkle the spice blend over the veggies and toss until all are coated.
  5. Slice the chicken sausage into 3/4 inch rounds and add to the bowl with the veggies.
  6. Preheat your air fryer to 390°F.
  7. Spray the air fryer basket with cooking spray and add the sausage and vegetable mixture in an even layer.
  8. Cook for 10 minutes, flipping halfway through.
  9. Remove from the air fryer and serve immediately.

Notes

To avoid overcrowding, consider cooking in batches if necessary. Serve over cauliflower rice or quinoa for a complete meal.
