- 1 lb smoked sausage, sliced
- 1 cup rice
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups chicken broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions
- In a large skillet, cook the sliced smoked sausage over medium heat until browned.
- Add chopped onion and bell pepper, sauté until softened.
- Stir in the rice and Cajun seasoning.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed.
- Season with salt and pepper to taste.
- Garnish with green onions if desired and serve warm.
Notes
For perfect results, use a heavy skillet with a tight-fitting lid. If the dish seems dry, stir in an extra 1/4 cup of broth and cover for a few minutes.
